Name: Jes Childers
Restaurant: The Bistro and Wine Bar at Mirbeau Inn & Spa
Town: Plymouth
Background: I started cooking at home at a young age and enjoyed it so much that I went to Plymouth South High School and completed their Culinary Arts program. In lieu of college, I chose to further my knowledge through experience. I have had the pleasure of learning from some great chefs. Some of whom studied abroad (France, Japan), some were Clio Boston and Top of the Hub alumni and some worked in great culinary destinations like New Orleans and Chicago.
Q1 What is your first or best memory of cooking and who was it with?
I don’t have a first memory of cooking, since I have been doing it from such a young age. I do remember the first thing I learned to make completely from scratch, with my mother, were pancakes
Q2 What is your most popular dish?
I would say our most popular dish is the Steak Frites. It’s a classic dish with a contemporary spin.
Q3 What is your favorite dish to make?
My favorite dish to make is the Pan-seared Scallops. It’s simple, but there’s a lot of satisfaction, pulling off that perfect sear.
Q4 What do you eat when you are not working/ favorite thing to eat?
When I’m not working, my favorite thing to eat is pretty much everything! I do a lot of smoothies, soups and grass-fed steaks.
Q5 Person you would most like to cook for (Anyone, including a Celebrity or historical figure )?
I really have loved to cook a meal for Anthony Bourdain. He was just such an appreciator of food culture all over the world, and an inspiration to so many in this industry, myself included. It sparks a reflex to nourish those who nourish others.
Q6 Favorite Vacation spots, not necessarily food related?
My favorite vacation spot is New Hampshire in the fall; lots of hiking, apple cider, leaf peeping & farmstands.
Q7 Not your own spot, what is your favorite restaurant?
There are so many amazing restaurants I’d name here, so I’m going to keep it very local. My favorite restaurant to eat at is The Tasty in Plymouth. Their menu is always thoughtful and interesting; full of fresh local ingredients and I really like the tapas style of dining they do there.
